i know that sherburne county's fire dispatch channel is patched 154.175, and is on an armer digital tgrp. are any of the fire tac channels (fire 1, fire 2, and fire 3) patched to VHF also, if so what are those freqs

No, the dispatch talkgroup is patched to VHF for fire pagers. The tac channels don't have pagers on them so there's no need for a VHF patch.

Not too sure about Sherburn Co, but in Scott County I was able to monitor the fireground channels on VHF analog using an Icom 910 hooked to a GP 9. At first I wasn't sure until I heard the activity on RR's streaming feed, a couple seconds behind the analog.

Not sure about the usefulness, and I only tried it once about a year ago.

Does anyone know if Itasca county patches any talkgroups?

I would assume that they would have the dispatch talkgroup patched to VHF for paging just like other cities/counties do.

The only ones that don't are the big cities like Minneapolis and St Paul. That's because they employ a full staff of full time firefighters, so they aren't paging volunteer/paid on call firefighters to respond to calls.
