Default over my head with pro 164

I owned a scanner years ago it was a pro 92 I believe and a friend helped me to program it
I just purchased a pro 164 and read the user manual for about 2 hours.
Now I was able to grasp some basic functions and I was able to program in my local police and sheriffs dispatch and monitor them all on a scanned bank

My question is Whats the deal with the whole trunking thing?
When I programmed in the frequency it was PER the manual and I entered the frequency listed
I never once pressed TRUNK or any TRUNK codes etc

I do hear CCOM and some fire dispatch but how do I know if I hear it all and if it is in fact "TRUNKING"

any advice would be greatly appreciated
here my local info
Union County, North Carolina (NC) Scanner Frequencies and Radio Frequency Reference

Since most of the talk groups in the VIPER system are Digital and the PRO-164 is an Analog scanner, you won't hear much. You may have to settle for what you have already programmed.
Analog and Digital are somewhat similar to AM and FM. You can't hear AM on an FM radio and vice versa.
