I have a yagi style TV antenna on my roof that was put there by the previous owners and hasn't been used in years. Is there a way to modify it to pick up 800 MHz decently (shorten some of the elements, add/remove some of them, etc).

I know I'd need new coax, but before I take this thing down I am want to make sure there is no use for it :)

In a simple answer no, get an antenna for the 800MHz frequency. The polarization of a TV antenna is wrong horizontal rather than vertical. It's also directional, so you would be limiting your receive ability. If you want directionality get a Yagi or Log Periodic, or get a simple vertical Omnidirectional.
