Its as simple as that. Once I have unitrunker setup the way I want, how do I back it up? What is the restore process like?

It backs up automatically!

To restore, navigate to the "Archive" tab in the main window. Select the archive you want based on version and time.

It's really a great feature. At first I under-appreciated it, but one day when the power went out, it corrupted my setup. I lost everything. Oh no! But wait, less than a minute later I was up and running again by restoring from one of the archives. UniTrunker sure had us in mind when designing this great software. Excellent!

The archive feature isn't a proper backup - at least not in the sense of disaster recovery. However, it just might protect you from user mistakes.

The revisions are all stored in the same folder. If your drive fails - that data will most likely be lost.
