EDIT: Nevermind, sorry. I just turned off app access to the WS1080 as an experiment, and EZScan talks to the scanner just fine.
All users of Win10 having problems with communicating with their WS-10xx or TRX-x scanners should look at this. I just took a major Win10 update last night, and tonight was reviewing my privacy settings, and found this. So anyone having issues should check their privacy settings, under the Other devices section. Possible that if this is turned off, EZScan might not talk to your scanner.
