In my current setup, I've managed to get 4 inputs total from 2 cards and 2 virtual audio input channels. I am interested in how the big guys do this? How do people go to 10 plus audio inputs? I am planning on upgrading my shack this winter and I'm looking at increasing to at least 8 feeds.

It depends from the setup you have and what you want to achieve. 8 feeds you said but what are the radios you use - sdr or dedicated radio/scanner? If you use radios - are they digital and ready to decode the audio or they provide raw audio through discriminator tap? Same question if you use scanners - digital or analog?

I will be getting a few surplus CMD1250's to use for my analog feeds. I was thinking of using a powered USB with audio USB inputs for each radio. I'm just not sure how many of those I can stack up.

When it comes to separate devices, you can stack as many as you want. Or at least as many as your hub allows :)
Alternatively you can split the audio on right and left channel by using Y cable. This way you can input 2 radios at one device. Something like this one
