When the staff come off the sideline for an injured player down, they always have those XPR7550s on their belts. What frequencies are they on? Simplex or repeaters?

Why does it matter? The NFL uses full 40-bit encryption anyway.

To answer your question -- if you look for a rolling field cart on the sideline you'll see the portable, on-field repeater-in-a-box.

Well that sucks. So even the medical staff encrypt their radios? That's rediculous.

Not really all that ridiculous, considering certain teams have demonstrated they are willing to go to such lengths as video taping opposing coaches' hand signals in order to gain an advantage.. Learning about an injured player's status from a medic's HT would be a huge advantage for the other team, no way are they going to let anyone hear that.
