Public Safety is on NTIRN, events talkgroups C1 and C2. Sadly they are encrypted though.

Any other good stuff to monitor for the State Fair that folks are aware of?

Not exactly 'riveted listening', but occasionally you'll catch something other than a lost child, or a concession stand requesting another keg of beer, on one of the DMR channels. As expected, these are all active.

I think there may be an error in the RR listing, is this correct?

That's what I determined last year and submitted, and recordings, so far, this year are the same livestock related transmissions.

I have those also, programmed in my TRX-1 to check for activity. All of these have multiple licensees in Dallas County

461.8375 is used by Megahertz for their Cedar Hill site. Everything I've heard, on that frequency, is from various MegaHertz users, including a fair number from CareFlite. I doubt if anyone else would get much use on it, since M'Hertz signal is so string & active. (Licensee is James T Hooper, the owner for Megahertz.)

Lot of activity, TGID 998, CC5. Transmissions not related to the Fair. This may be "Jet Aviation", but have not heard enough, yet, to positively call it. Frequency is also licensed to MegaHertz, at the Cedar Hill site, but for station class MO6, showing as downtown Dallas, near the old Southland Center/Sheraton Dallas.
