Just wanted to know - is it possible for 2 DVAPs to connect directly to each other and bypass the D-STAR repeater/reflector network entirely, for the purpose of point-to-point communication between 2 amateur stations?

You can if you use a Raspberry Pi setup as an ircDDB gateway. The gateway would need to have its own call sign and registered on ircDDB. I have written an article about it on the D-STAR Users facebook group - https://www.facebook.com/groups/DSTAR.Users.Group/ . You can find it pinned to the top of the page. The article also has a link to a youtube video showing it in operation.
