I am in Las Vegas for the next couple months for work and don't have a scanner but do have a VHF XTS 3000. Any very active VHF worth monitoring here in the Vegas area?

You forgot this one:

RX - 159.15000
TX - 154.77000
PL/DPL - 77.0 PL

LVMPD Information and records channel. Still in use and patched in to the 700 MHZ via cross band configuration. It's on the Stratosphere for another year or so when the license runs out.

I have a couple of VHF community repeaters up on Black Mountain one is analog and the other is digital

There is also the Vegas Monorail which uses railroad frequencies and can get busy at times also.
160.98000 110.9 PL LVMono Annc Las Vegas Monorail - Train Announcements
161.05500 118.8 PL LVMono Disp Las Vegas Monorail - Main Dispatchn
161.13000 127.3 PL LVMono Ops Las Vegas Monorail - Operations and Alarms
161.20500 CSQ Las Vegas Monorail - Unit-to-Unit 1
161.28000 110.9 PL LVMono U-U 2 Las Vegas Monorail - Unit-to-Unit 2

A few cab companies still use VHF:
Yellow Cab 1 - 152.27000 D-155
Yellow Cab 2 - 152.45000 D-155
Star Cab - 152.36000 D-627
