I am trying to provide a couple decent feeds, however my aging Radio Shack PRO-433 and Uniden BC350A do not allow for 7.5kHz spacing that the local county fire departments use.

What would you fine folks recommend I upgrade with?

I'm not looking for anything extravagant or capable of scanning 20000 channels as the radio will be used for providing online feeds only...just 7.5kHz spacing without breaking the bank.

Also, as it stands right now, there is no need for any trunking capabilities either.

Nobody uses 7.5KHz channel spacing. It's either 8.33KHz (aircraft band) or 6.25KHz (700MHz band).

The BC125AT is cheap, and would probably work for you.

Most of those frequencies are not evenly divisible by 7.5KHz.

That band occasionally has some non-standard offsets to work around legacy business frequencies. But it doesn't have 7.5KHz channel spacing. Uniden scanners default to 5KHz channel increments on that band, which is close enough that the 2.5KHz rounding error won't affect reception. If you get a more expensive model like the 436, you can change the band default channel increment to 2.5KHz and dial in the exact frequency. But that won't likely make any difference in reception.

Alternatively, get a SDR dongle and the scanner plugin. It can scan analog freqs insanely fast if you configure it right.
