Is there a way to add my call sign, but NOT have my street address available for public consumption?

Nope. If you add your call sign to RadioReference, the info tied to your license will show up on your profile (name, address, etc.).
Whatever address or info that is tied to your call sign is public info anyway, and very easily found regardless of whether RadioReference displays it or not. Punch your call sign into Google and you'll see. Most guys on this site are used to searching the FCC ULS, which will also return your name and address for your call sign. There is really no point in RadioReference filtering or hiding this info.
If you are concerned about privacy regarding your home address being publicly available, you may want to look into renting a PO box, then updating the address on your license.
