So I need to mount a yagi VHF antenna to a vertical I-beam inside a building. Any suggestions on the best type of mounting hardware to use?

Unistrut.

They make specific brackets designed to clamp Unistrut to I-Beams. Get the right clamps to mount the strut to the beam, and the right clamps to hold the mast.

Think of Uni-Strut as "adult Legos". You need to familiarize yourself with how it works, but once you know what they got and how to put it together, you can build dang near anything.

Competing products: “SuperStrut” and “B-Line”. I’ve used Unistrut for some “impossible “ installations atop NYC skyscrapers.

Yes. UniStrut is the brand name, and you can get it at Home Depot. SuperStrut, B-Line, etc. are less expensive, but not usually found at consumer oriented stores.
Either way, those will do what you need. I've mounted a few antennas with that stuff over the years. Just welded up a new side gate at home using scrap Unistrut.
