I've been researching and finding a ton on HOW to program the Pro-97 for various weather functions - FIPS, SAME, Priority.... but I'm getting confused on which of those functions I want, at least for what I want to do.

I'd like to leave the Pro-97 on at night while we sleep and not hear anything except severe weather alerts.

What's the best way for me to accomplish that?

Thanks.

The Easier to Read Manual may be of some use for you.

I think what you are looking for is a basic SAME Standby mode which will mute the radio and listen for a SAME alert. It basically sets the radio to listen to the weather channel for an activation code/tone. According to the above manual, all you have to do is press FUNC -> WX. You have an option of programming FIPS which tells the scanner which county it should sound an alert for, but the default is all which will let you hear weather alerts for other counties in the area. Instructions for FIPS are also in the manual above.
