I got a Baofeng UV-5R just to listen in for emergency situations - but I'll be helping with a Boy Scouts type class on Monday night talking about emergency preparedness. I'll be giving a few minute overview of communication tools, radio will be mentioned - are there any good emergency/interesting channels to listen in on that the device is capable of? Obviously there's the 24/7 NOAA, but wondering if there's anything else young boys will find more "cool".

Thanks in advance!

With that radio you are pretty limited. It is a 2 meter, 440 Ham radio after all. Using it as a scanner is well, not ideal. It covers 136-174MHz, 400-480MHz RX, and in this city the only Fire and EMS stuff is CCFD rural channels a couple EMS, some BLM and NPS.

Hopefully, you'll explain to them the difference between scanners and transceivers and also that there are rules about transmitting. The Baofeng UV-5R is pretty limited as a scanner. And, that button on the side that makes it transmit is strictly off limits unless they get an amateur radio license.

As others have said pretty limited. You can try NOAA weather radio on 162.4 and 162.55 Mhz. You may hear something on 462.625 which is a GMRS repeater on High Potosi. I'd add them to your list of frequencies. Also 461.275 which is Swissport in the airport.
