I was wondering if anybody has happened to catch the frequencies utilized by the Grand Central Fire Brigade

Scanner Master's New York Metro / Northern NJ Communications Guide shows 160.335 as the Terminal's Emergency channel. I suspect this would be the channel you'd find that unit on. Select FDNY units are capable of utilizing this repeater, which also covers the Park Avenue tunnels.

Fdny units use 154.430 in GCT.
They do not have the MTA channels.
Plan is to build out a UHF repeater at some point.
