I don't know. It says Sheriff, Fire, and EMS but those two counties have police departments too so if you are hearing a lot of police type traffic, then you are probably hearing the respected police departments. The sheriff departments in those counties mostly do courthouse, jail, and warrant services and you do not hear a lot of talk compared to police and fire. Depending on what the live feed provider has programmed in his scanner pretty much will depend on what you will hear. However usually you will be able to monitor police calls for service (dispatch) plus some car to car activity. For Fire/EMS you usually hear dispatch and operations (for instance a working fire or accident). Any undercover or surveillance traffic is usually encrypted and the provider will probably not have those channels programmed anyhow (you would not want to hear encrypted traffic because it makes a very annoying noise). However if anything big happens, you will prbobaly know about it because they talk a lot. Hope this helps.
