I'd suggest taking a look at the maryland milair thread. I know you are looking for specific delaware channels but don't know of any aside from the dover ones.

The wiki has a rather extensive set of articles on milair in our area - of course, the sticky thread is THE place to be for current traffic, no doubt about it...

You should note that numerous flights transit Delaware on its way to NJ and other exercise areas. You will find various details there, including flights transiting into McGuire in southern NJ.

I think that the Phillyscanner guide has a section on Dover - you can order that through Scanner Master. I have that subscription, and it's quite useful as a general guide. It's updated on an irregular basis. It's a one time fee, and after that, it's yours. It's published as an eBook in PDF format that you can download section by section. I wish we could copy that data into the wiki, too, frankly.

Here's hoping you have a discone or ScanTenna mounted nice and high - this is a portion of the scanning world where a duckie won't cut it...

[edit] Check that - there's a dedicated section for Military bases, and another for Aviation. Without going into details :D both are worth checking out
