I have a 2096 that I bought about 7 years ago. Should I update the firmware on it ? I have no idea how or why I would. I don't know anything about firmware honestly.

It's old enough that I doubt a firmware upgrade at this point would make much of a difference.

I am sure the latest firmware is a few years old.

Yes. It's always worth updating. The link to the U1.4 firmware update is in the RRef Wiki for Pro96/2096 If you're trying to get a Trunked P25 Simulcast system? then it's worth it as U1.3 and U1.4 especially dealt with fixing Simulcast problems. U1.4 fixed my Pro96 so I could trunk the Statewide system correctly after rebanding in the 800mhz range. The Pro96/2096 is better than the WS1080 I have in many ways. Too bad they didn't allow for Phase II stuff. I'd still be using it everyday.
