Recording more than one channel?

Let me preface this by saying I'm a pretty new scanner junkie and am still learning the ropes.

So with that out of the way, I basically want to know if there are any high quality scanners that can record multiple streams of audio at once. This may sound really elementary, but I want to record multiple streams of dispatches all from one badass scanner. Is there anything out on the market that does this?
