What exactly is the TAC and TALK services?

I use the dispatch options in my scanner.. For example..

Fire Dispatch
EMS Dispatch
Law Dispatch

I am curious about
Fire-Tac
Fire-Talk
Law Tac
Law Talk

What are they, and what are they used for?

I wasn't thinking it was a radio "thing".. but a frequency/talk group "thing". That is why I didn't go to the manual. I thought it was just something that was assumed knowledge. Cool.. now I know.

Tac = tactical
Talk = talk channel, sometimes simplex

tac is used on scene at the calls
talk is used for just talking around ex. leos talking about where they wanna eat at
