Interesting. Can the outputs of the SDRs be connected to multiple streaming options?

They can stream to other programs using tcp/ip. Here is an example -

Very interesting project. Is there a list somewhere that shows the SDR's that are supported? Obviously I see SDRPlay, LimeSDR, NetSDR, HackRF, but curious about simple RTL dongles and Airspy devices as well. If I missed a list my apologies.

Yes, it does RTL dongles and Airspy devices. The Soapy Website has the complete list. When you start up the program, it lists the devices currently installed - if you want additional devices, you need to install them. Here is the Windows start up list -
