Can sentinel software be used with my iPad to program my SDS-100?

No, Sentinel needs to be run on a Windows computer, or a Mac with virtual Windows.
It can if you run a windows virtual machine on your iPad. Otherwise, no.
OP would need a lightning male to mini USB male cable just to get the scanner to interface with the ipad (very hard to find, ipads don't have standard USB ports, one of which are needed to connect the supplied data cable, though I guess an adapter like this one would suffice). Not sure how well that would work if OP were able to get a Windows VM on an ipad. Definitely not worth the extra effort & cross platform hoop jumping IMHO. Get a Windows tablet!
