What's this all about? 482.5625/71.9 licensed to Stonybrook FD seams to be a cross band repeater for the Brookhaven Town low-band [46.40] fire channel. The term "fire com" is used alot, is that county F.R.E.S.?

Yes that is an x-band to Firecom 5th division 46.40. SBFD transmitts on the UHF side and FRES obviously on the lowband
Does SBFD use the UHF side for their main operations channel or only when they need to talk to a station on the low band?
