I will be in Wears Valley in a few weeks and I found the Fed Frequencies for the Mts. Some of them are APCO-25 for the mode. I have not listened to APCO-25 system before. I am using a pro96 and WIN96 to program it. Is there anything special that I have to do in order to listen effectively?

APCO 25 is 'digital modulation'. Program it in the Pro 96 as FM, and be sure you do NOT have CTCSS/DCS turned on on that channel. It will auto recognize P25 and decode it when the channel is set to FM/NFM

Of course, a lot of federal stuff is also encrypted, as well as digital, and that will remain just 'noise' to you.

The National Park is not encrypted so you don't have to worry about that, and 99% of all their communications is digital. Also, the frequencies you see listed are actually a linked repeater system so all channels will have the same thing on them. Just pick the one that has the best reception for you.
