Finding where APCO P-25 is in service?

Is it possible to know where APCO P-25 is being used, simply by looking at FCC licenses? If so, what would I need to look for?

The database info you referred to, is that compiled from personal observations or from FCC license data?

I'm just curious how you could find out, if for instance, something wasn't listed in this site's database.

The RR DB is compiled from all available resources - with the stipulation that the data must be verified.

You can't. The FCC license info will tell you why types of emissions are allowed - but it won't tell you what specific trunking format was used.

If you've found something that isn't listed in the RR DB and you're in reception range - turn on your radio and listen. If your radio understands P25 ... you've got your answer. If you have an analog-only radio - there are sound recording samples of what the voice and control channel sound like on an analog receiver.
