Statewide Point To Point 155.370mhz and Sheriffs Net 155.730mhz. Does anyone know the Audio Options, CTCSS or DCS for these Channels? Thank You.

Generally they don't use tones on them. The STL County radio does use 156.7 on 155.370 but I think that's so they can mask the audio when it transmits its CW identifier. I know stations calling on point to point don't need any tone to be heard by other monitoring stations.
A lot of departments also use the tri-county Slater system for point to point talkgroup. It's just an analog patch into Slater that sounds like garbage due to it being analog.
I don't recall the last time I heard Sheriff's net on 155.730.
They have a interop talkgroup on Moswin that is probably the replacement for the old Sheriff's net.

Would the 156.7 work statewide? Im in south west Missouri.

you're about 20 years too late. They used to be 10 deep! That's well before P25, MOSWIN etc/
Yes I know, RR still has sheriffs net listed and so does Sentinel

yes, Radio Reference still show the Sheriffs Net active.
