Suggestions wanted: Using mini-pc to stream ProScan

I am currently running Windows on a big, old Dell PC and am considering switching to a mini PC with a solid state hard drive. I am using Proscan to run my BC 996xt and streaming remotely using Splashtop. That's all I use the PC for is ProScan and nothing else. I am on a budget and would appreciate any suggestions on what to look for in a Mini PC and any pitfalls to avoid.

I have a HP small form factor PC I purchased used from the local university for $100. It is an i5 with 8GB of ram. I replaced the HD with a SSD (about $50 for 500 GB). It had Windows 7 which allows a free upgrade to Windows 10. I also recently replaced a friend's old computer with a newer factory refurbished model of the HP for less than $200 dollars. It was purchased from Newegg with a one year warranty and clean new installation of Windows 10. There are other sellers, but Newegg has been around many years and I have purchased from them many times for my use and my computer business.

I have used one of these to run a remote 4 scanner setup I use for testing I use PROSCAN and ANYDESK to access the site remotely and monitor the site progress.

EBAY purchased HP thin clients are my reliable computers for remote scanners using ProScan. I have a couple been running for 5 years or so with no major glitches. There is a little bit of a learning curve for Windows Embedded as they do have differences in the way the computer gets set up.
Be sure to get the RAM and Flash along with a power supply. Should be able to get one for $50 +/-

Another good idea is to search Ebay for a laptop with a broken screen.
All laptops should have an external video port (VGA, HDMI, DisplayPort etc) that you could plug a screen into for initial setup.
Then it should work as normal to access it remotely.
