If you don't intend to use the CB portion of the radio, you can disconnect the CB antenna. But, if you accidentally hit the microphone transmit button, you could have problems with the CB transmit later on.

You could attach a dummy load to the CB antenna connector to protect the transmitter circuit. In the menu, you can set the scanner to have priority over the CB.

I had forgot about the Priority feature. It works fine if you are wanting calls from the scanner to interrupt the CB side when something on the scanner causes the scanner to stop on a frequency. But, otherwise, you will still hear traffic on the CB side till the scanner stops on something.
Connecting a small dummy load to the CB antenna output is a safer way to protect the CB as you mentioned.

Dummy load on a coax switch would probably be the thing to do that way you can use the antenna when you're ready.
