I am wondering if antennas will interfere with each other if stacked on a single pole, if so what clearance between antennas should be maintained.

I'll be using 800mhz and VHF / UHF

For receiving? No.

What can happen is that if the antennas are too close to the support structure, or too close together on a horizontal plane, you can make them directional.

I should add that if you are running a bunch of different receivers you can get some noise from the local oscillators in the different radios if the radios are too close, or if the radio has poor filtering, poor coax, etc.
