I have the backlight set to come on with squelch, but it doesn't stay on as long as id like.
Is that adjustable ?

Yes; under Menu > Display Options > Backlight Options. You can set backlighting for squelch :
  • Off
  • 5 sec.
  • 10 sec.
  • 15 sec.
  • Open squelch ( i.e. as long as squelch is open; my preference)

The backlight comes just fine, but by the time I go to look at the screen it goes off again.
I want it to stay on another couple of seconds.

You can keep the backlight continously on as it is only a 6% lower power consumption. Lets say that if you have it on 50% of the time due to the channel activities, then your battery will last 3% longer. Instead of 7 hours it will be 7 hours and 12 minutes if you have it squelch activated.
