Is it possible to listen to multiple talkgroups with a single rtl-sdr or are you restricted to 1 talkgroup at a time. Could someone give me a little info on this please?

You can basically listen to 1. I know with sdrtrunk you can listen to two. Other software may let you. Most pc's only have a left and right speaker. If you run Unitrunker (phase 1 only) or sdrtrunk on windows, you can record multiple tg's at the same time and playback via a browser.
There are many variables and options. What are you looking to listen to and what flavor of pc are you using?

So the answer is a most definite "it depends".
The main issue is that an RTL device is limited to about ~2.0-2.5Mhz of receivable bandwidth, so the ability to receive multiple tgids simultaneously from a trunked system in a reliable manner would require all the P25 system's channels to fit within that spectrum. Technically there is no reason that the chunk of received bandwidth can't be shared, and in practice this kind of sharing works well with wider bandwidth devices such as the Airspy etc.

What I’m wanting to listen to is Mississippi MSWIN p25 p2 system 769-775MHz

You can receive and record more than 2, but you can’t really listen live simultaneously to more than 2. And as others have said, there are variables and dependencies, which may require 2 or 3 dongles.
More than one talk group can be monitored with one RTL-SDR. But like most things with SDRs, it's a bit more complicated than that. If you want to use one RTL-SDR to capture talk groups on the system you reference, you will need a computer running Linux and OP25 software - I prefer the Boatbod version. If you are not well versed in computer technology, it will not be easy to set up and configure. If you don't mind paying $25 for the software, DSD+FL can be configured to run on a single SDR, and it uses the Windows OS. But again, not so easy to set up.
