If your talking a "Master Database update"...
That has no effect on any other scanner settings in Sentinel...

Why does it go back to the default text colour with a Sentinel update?
Are you changing the text colors through the scanner's menu system? If so....

Read from the scanner into Sentinel to put those color changes you made in the scanner into Sentinel. That way the next time you write from Sentinel to the scanner (update), it won't put the default colors back in.

Agree with fxdxcon.... If you changed it on the scanner itself, and did not read it back into Sentinel...
Then the display settings are not updated in sentinel and are still at the default settings when you wright back to the scanner with any other changes...

If you want to save the original display settings in Sentinel, go to the File tab and Export Display Customizing Settings, give the file a name, and save it. Then, you can edit the settings in Sentinel and export and save a file with the new settings using a different name. After doing that, you can go to the File tab and Import Display Customizing Settings, select the file you want, and save it in Sentinel. You can create as many display settings files as you like and easily select any of them when creating new profiles. The display settings in the current profile will be written to the scanner.

No need to save the original settings, simply use the Reset to Initial button on the bottom of the page.
