To trunk track you would need two SDR receivers.

It depends of the software. You decode the control channel and when a call starts the same receiver are tuned to the voice channel and when the call ends it goes back to the control channel. No need for two receivers.

But I don't really see the need for a Raspberry 5 and a touch screen when you can do the same on your own PC. But maybe he planned to use it mobile with that microscopic text on the display and fiddly way of changing the volume and what about managing TG's on that touch screen while driving.

Trunk tracking with one dongle in SDRT is possible if all the freqs fit the dongles limitations. OP25 and DSDPlus, you can use only one dongle.
