I am using my ft-8900 remote head cable on my ftm-500dr and also using my ft-857 separation cable for my new yaesu ft-891.
I didnt want to pay for the separation kit and since I am not using the older radios that much I said why not.
But now I am wondering should I? Are the news separation cables different or are they the same wire configuration?

This isn't much help but you could always break out the ole continuity tester
and check the cables end to end and color for color.
The other thought is that you would think Yaesu would consider that this
might come up. it would be bad for business and bad for customer service
if they did not maintain uniformity in the cables. they probably are the same
but I'm not going to try it and be the first! LoL

The cables are NOT the same. The FT-8900 separation cable has six conductors and RJ12 connectors on it. The FTM-500 cable has eight conductors and RJ45 connectors on it. I would strongly advise you get the proper cable for the FTM-500. Any Cat5 or 6 cable that is wired straight through will work.
