(KSL News) Police in Orem are investigating a stabbing and shooting that happened this morning in the parking lot of the IHOP restaurant on 850 W. University Parkway.
A 28-year-old man and his girlfriend had finished breakfast at IHOP and were saying good-bye to one another in the parking lot when they were approached by a 33-year-old Salt Lake man.
The suspect startled the couple. The suspect reportedly apologized to the couple and proceeded to attack the young man with a pair of scissors, stabbing him numerous times in the face, neck and arm.
An off-duty Chicago police officer, who was in Utah to instruct law enforcement, was standing just outside the front door at IHOP waiting for his partner to come out. He saw the assault taking place and went to break up the fight.
The officer drew his gun and ordered the suspect to drop the weapon. Instead, the suspect made another movement to stab the victim. That's when the officer shot the suspect.
Police said the suspect was delusional and showing signs of probable psychological disorders.
The victim was taken by paramedics to Timpanogos Regional Hospital. The stabbing suspect was taken to Utah Valley Regional Medical Center. Both the victim and suspect are listed in stable condition.
