I just noticed a "Private" channel used by Modern Waste Disposal, although the TGID isn't your "normal" style format. It is i2929, but the guys said "Hey you on Private?" "Yeah I'm on the other side of the truck, so I can't see what the radio is doing though", Anyone able to explain whats going on?

On most trunked systems the "i" prefix indicates a private call between subscriber units.

Private calls do not use a talkgroup, they are radio to radio, and thus use the subscriber IDs.

Now would this value change between users, or is it set to a specific TGRP?
The format is i(RID). So if radio 1234 calls radio 1212 you would see i1234 and i1212 as the apparent "TGIDs".
It is a nuisance if you are attempting to monitor a system on Uniden ID Search looking for new TGIDs, with known TGIDs locked out, you will still see all the "i" calls.
