I'm staying in San Ramon for a few days I have a Uniden 996P2 scanner what trunk system would I put in for San Ramon

Would I put in the North Central or South or would I put all 3 in??

Per Contra Costa County, California (CA) Scanner Frequencies and Radio Frequency Reference , you want the East Bay Regional Communications System (EBRCS) Trunking System, Multiple, California - Scanner Frequencies .

Not sure what you mean by "North Central or South", but you'd probably want to use the Contra Costa County Central Simulcast site for the San Ramon area.
