Using sdrsharp I am hearing NXDN 4800 9600 traffic my question is how to I tell the user info in conventional?
Also I am decoding TRBO and Cap+ looking to get more radio details

Best way is likely to ID the user (check licenses in the area), then see if the license is for a trunked system or conventional.

You can also monitor the frequency for days to see if it becomes a control channel. That would be a dead giveaway it's trunked.

Also look for other channels with the same Network ID. While not definitive, see if the same users use that channel, too. If so, it may be trunked.
