I wondering what you guys know about voice over IP UHF and VHF?

I guess the bigger question is, what are you trying to do?

Im just curious how it works..the local air medical provider uses it but im no longer in the area for 9 of the 12 months and im wondering if i can listen to them still.

VoIP or RoIP can be used instead of wire lines, leased telephone circuits or microwave radio links to connect repeaters or base stations to a dispatch center.
It doesn't prevent scanner users from listening to them.
