ProScan: Why do System Quick Keys only show up for Conv Systems?

Why don't other systems like DMR & P25 not show up when setting the quick keys? Are they separate from each other?

Because that's the way the scanner is. You didn't advise on the scanner type but I'm sure you are referring to the DMA types.
The DMA type does not use System Quick Keys on trunking systems at the system level. They use Site Quick Keys.
If you go into the scanner menu and look at a trunking system, you will not find System Quick Keys at the system level. Again this applies to just the DMA type of scanners. The BCDx36HP and SDSx00 uses System Quick Keys on trunking systems.

Assign each site a Site Quick Key.

I just figured out that trunked and digital systems only use number tags, how do I use them?
Number Tags are different then SQK's. Basically Quick Keys turn off and on systems/sites. Number Tags are shortcuts to go directly to a system or channel.

Read the Easier to Read manual that was posed in #4. Quick Keys and Number Tags are explained

Trunking systems uses SQKs at the site level. Conventional systems can be a digital system too and is not a factor in the use of SQKs.

In ProScan, click on one of the site nodes (left side) then you should see the 'Quick Key' option on the right side. Pick a number. Do that to all the sites you want SQKs assignments. Upload to the scanner afterwards.

It does, if you go to the database and expand the tree you will see all the QK.
As said above this is something very easy to look up in many different places, including the help in ProScan
