This should be an easy question but I cannot seem to figure it out. I use ARCxt and upload systems onto my scanner but each time I scan it includes a custom scan (Custom 8) and I cannot figure out how to remove that from scanning using the menu options in the scanner. Thanks in advance for any help.

Press "menu button", scroll to "Search for, scroll to "Edit Custom", scroll to Cutom 8, scroll to "Search with Scan" and set to "OFF".....Or when you see Custom8 scanning press F+L/O-L/O......

Since you did it manualy...Make sure you download that change from your scanner into ARC. Otherwise the next time you upload you'll be back where you started. I've done that myself.
