This is speculation on my part. I think Icom went away from the IC-706/IC-7000 because they couldn't get the parts necessary to build them and they were tired of fighting the heat-related issues those radios had. The IC-7000's color display is very nice and the radio does have the conventional mobile radio form factor. But, the IC-7100 has a touch-screen display which gives the user access to many more functions and settings from the front panel without the expense and clutter of multiple buttons and knobs. The IC-7100 also has a built-in USB sound card and USB CI-V connection that the IC-7000 doesn't have.

Mounting radios in my Durango is just in the planning stages, but I think I can conveniently mount the IC-7100 control head in the console with the RF deck in the back somewhere.

If you end up using heavier cable like LMR 400 or 600, you may want to use a short jumper of LMR 200 ir LMR 200 ultraflex to connect to your radio. The heavier cables are fairly stiff. The short jumper of smaller, more flexible, cable will make the install easier and the signal loss will be negligible.
I agree 100%, even with a larger 'mobile' radios, those stiff, heavy cables are a bear to form behind the radio. At least a '90' will probably be required.
There is another company that makes this higher grade, lower loss cable that I use and well pleased with. Shireen out of Germantown, MD just west of Baltimore.

The numbering system is the same with "RFC" as the preface.
